A Winter Table: Spiced Butternut Squash, Pretzel Bites & Hot Chocolate
There’s a particular kind of comfort that only winter brings. The quiet hush after snowfall. The early darkness that encourages candlelight. The invitation to linger a little longer at the table.
This is the season when meals become less about speed and more about warmth; warmth in flavour, warmth in company, warmth held between your hands.
Recently, that warmth looked like a bowl of spiced butternut squash soup, served alongside homemade pretzel bites and finished with a mug of rich hot chocolate. Simple, yes, but deeply satisfying.
The Bowl
Butternut squash, roasted until caramelized at the edges, forms the base of this winter soup. Blended with softened aromatics and warming spices, it becomes silky and grounding, the kind of dish that feels both nourishing and refined.
Just before serving, I drizzle each bowl with walnut oil for a nutty depth and add a spoonful of crème fraîche for contrast. The cool tang against the warmth of the soup elevates it from everyday to intentional.
The Table
The pretzel bites bring something playful and tactile to the meal; warm, golden, and perfect for dipping. There’s something comforting about tearing into soft bread on a cold day. It turns a bowl of soup into an experience.
And then, hot chocolate. Not as dessert exactly, but as continuation. A lingering moment at the end of the meal. Steam rising from the mug, conversation slowing, winter settling in around you.
Winter’s Inspiration
Winter cooking doesn’t need to be complicated. In fact, it’s often at its best when it’s simple and generous. Squash, flour, chocolate; humble ingredients that, when given time and care, become something memorable.
Soup may be the centerpiece, but it’s the thoughtful additions; a drizzle of oil, a basket of warm pretzels turn dinner into something that feels complete.
An Invitation
As the colder months stretch on, let your table become a place of warmth and abundance. Pair your soups with something soft and handmade. Follow it with something sweet and comforting.
Winter invites us inward, into our kitchens, into conversation, into meals that nourish more than just hunger.
And sometimes, that nourishment begins with a bowl of soup and ends with hot chocolate.
