The Art of the Sauce: Elevating Meals Through Flavour

Recently, some friends and I hosted a wine-tasting evening with a playful twist: each of us drew a region from a hat and had to bring a white and red wine from that part of the world along with a food pairing that reflected the region.

I pulled Australia & New Zealand.

After doing some research and checking out what was available, I landed on a bold Shiraz from Southern Australia and a crisp Sauvignon Blanc from Northern New Zealand. For my food pairing, I decided to make spiced lamb and beef meatballs; a dish with just enough character to stand up to red wine, yet mild enough to leave room for the real star: the sauce.

And that’s when the fun really began.

One Dish, Three Sauces

The beauty of the meatball is its adaptability. With a neutral but flavorful base, it becomes a canvas for almost any sauce you layer on top. For this dinner, I explored three very different approaches:

  1. Māori-Inspired Yogurt Sauce
    Creamy, tangy, and herb-laced, this sauce balanced the spice of the meat and nodded to the cultural roots of New Zealand. It paired beautifully with the Sauvignon Blanc — crisp wine meeting a cool, citrusy sauce.

  2. Fresh Chimichurri
    Bursting with parsley, garlic, and a hit of acidity, this Argentine classic brought brightness and a touch of bite. With the Shiraz, it was an explosion of contrast: bold, fruity red against a sharp green sauce.

  3. Smoky Romesco
    Made with roasted red peppers, almonds, and smoked paprika, Romesco is smooth, nutty, and deeply savory. It wrapped around the lamb and beef with warmth, creating a pairing that felt indulgent yet grounded.

What I loved most was that the sauces completely changed the experience. One dish, three personalities. Guests got to try different combinations, discovering for themselves which pairing spoke to them most. It turned a simple plate into something interactive, surprising, and fun.

Why Sauces Deserve a Spotlight

Sauces don’t just accompany a meal — they define it. They can brighten, soften, or completely transform what’s on the plate. And while homemade sauces might sound intimidating, many are surprisingly simple to pull together with pantry staples and fresh herbs.

Next time you’re preparing a dish, whether it’s grilled vegetables, roasted chicken, or even a tray of meatballs; think of the sauce as an opportunity to play. Offer two or three options and let your guests create their own perfect bite.

It’s an easy way to elevate your hosting: versatile, memorable, and just plain delicious.
